The breaker stage marks the transition from mature green to ripe. At this point, ethylene production accelerates and the fruit will continue ripening off the vine. Commercial tomato growers often harvest at breaker stage for better shelf life, allowing ethylene to complete ripening during transit. Cherry tomatoes with thin skins (like Sungold) should be picked before full ripeness to prevent splitting.
