    Lycopene is the pigment that makes ripe tomatoes red. It develops as chlorophyll breaks down during ripening, triggered by ethylene. In heirloom tomatoes like Cherokee Purple, lycopene interacts with retained chlorophyll and beta-carotene to produce the distinctive dusky purple-brown skin. Lycopene production requires temperatures between 50–85°F; extreme heat inhibits synthesis.
