Anthocyanin

One of a group of water-soluble flavonoid pigments held in cell vacuoles, responsible for most red, purple and blue colours in flowers, fruits and autumn leaves; the colour shown depends on the pigment's chemical environment, including cell pH and complexing with metal ions such as aluminium.
