Cucurbitacin

Cucurbitacins are triterpenoid compounds naturally produced by cucumbers, squash, and melons. Modern breeding has largely eliminated them from cultivated varieties, but stress (high heat, drought, temperature swings) can trigger production, especially in older heirloom genetics like Straight Eight cucumber. "Burpless" cucumber varieties have been specifically selected for low cucurbitacin content.
